Roasted poblano peppers and chili powder bring spice to these beefy grilled burgers.

Ingredients
 
1/2 medium onion, finely chopped
2 large poblano peppers, roasted, seeded, and chopped
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1-1/2 pounds lean ground beef
8 ounces Monterey Jack cheese with jalapeno peppers or Monterey Jack cheese, shredded
4 large hamburger buns
Assorted condiments

Directions

1. Mix the onion, poblano peppers, chili powder, salt, and black pepper in a large mixing bowl; add ground meat and mix well. Shape mixture into 4 patties about 3/4-inch thick. Place on a tray; cover and refrigerate for 1 to 2 hours.

2. Place patties on the lightly oiled rack of the grill directly over medium heat. Grill for 14 to 18 minutes or until an instant-read thermometer inserted in centers registers 160 degree F, turning burgers once. Top burgers with shredded cheese during the last 1 minute of grilling.

3. Toast hamburger buns on grill rack, cut sides down, about 1 minute or until lightly toasted. Serve burgers on buns with desired assorted condiments. Makes 4 burgers.

Test Kitchen Tip
To roast poblano peppers, heat oven to 425 degree F. Halve peppers lengthwise; remove seeds and membranes. Roast peppers, cut side down, on foil-lined baking sheet for 20 minutes or until skins are dark. Wrap in foil; let stand 20 minutes. Peel.


Quick, easy and full of flavour! 

Ingredients (serves 4)

2/3 cup vegetable stock
1/3 cup reduced-salt soy sauce
1/4 cup oyster sauce
2 garlic cloves, crushed
olive oil cooking spray
1 red onion, cut into thin wedges
200g shiitake mushrooms, thickly sliced
200g oyster mushrooms, thickly sliced
1 bunch broccolini, trimmed, cut into 3cm lengths
4 eggs
4 eggwhites
60g baby spinach, to serve

Method

  • Combine stock, soy sauce, oyster sauce and garlic in a jug. Heat a wok over mediumhigh heat. Spray onion with oil. Stir-fry for 1 minute. Spray mushrooms with oil. Stir-fry for 2 minutes. Add broccolini. Stir-fry for 1 minute.
  • Add stock mixture to wok. Stirfry for 2 minutes or until mixture boils and broccolini is tender. Remove from heat. Set aside.
  • Whisk eggs and eggwhites in a large jug. Heat a non-stick frying pan over medium heat. Spray with oil. Add half the egg mixture and swirl to coat base. Cook for 1 to 2 minutes or until base of omelette is golden. Turn and cook for 1 minute. Slide onto a chopping board. Repeat with remaining egg mixture. Cut omelettes in half.
  • Place omelette halves on plates. Top with spinach leaves and broccolini mixture. Fold over to enclose filling. Serve.

2 eggs, separated
1/4 cup caster sugar
250g mascarpone cheese
300ml thickened cream
300g plain sponge cake
1 cup strong espresso coffee, cooled
1 cup Bailey's Irish Cream liqueur
250g strawberries, hulled, diced
125g fresh or frozen blueberries
125g fresh or frozen raspberries

Method

  • Using an electric hand mixer, beat egg yolks and sugar together in a large bowl until pale and creamy. Fold in mascarpone. Wash and dry beaters. Whip cream to firm peaks. Fold into mascarpone mixture.
  • Wash and dry beaters. Beat eggwhites until stiff peaks form. Fold into mascarpone mixture. Refrigerate for 30 minutes.
  • Cut cake into 1cm cubes. Combine coffee and liqueur together in a jug. Combine strawberries, blueberries and raspberries in a bowl.
  • Place 4 cake pieces in the bases of eight 1-cup capacity glasses. Pour 25ml of coffee mixture over each. Use a spoon to press cake into base. Top with 2 tablespoons of mascarpone mixture and 1 heaped tablespoon of berries. Repeat layers with remaining cake, coffee mixture, mascarpone mixture and berries. Cover. Refrigerate for 3 hours or overnight. Serve.

Here's a freeze-ahead dish that combines two family favourites - korma curry and meatballs. Not only is it a winner for feeding the kids, but it's right on budget at only $4 per serve.

Preparation Time

Ingredients (serves 6)


800g lamb mince
1/2 cup chopped fresh coriander
80g (1/3 cup) korma curry paste
2 1/2 tsp finely grated fresh ginger
1/2 tsp salt
1 tbs vegetable oil
1 brown onion, finely chopped
2 garlic cloves, finely chopped
400g can diced tomatoes
400ml can coconut milk
2 dried bay leaves
1 cinnamon stick, broken in half
Steamed rice, to serve

Method

  •  Place the mince, half the coriander, 1 1/2 tablespoons curry paste, 1 1/2 teaspoons ginger and the salt in a large bowl. Season with pepper. Mix until well combined. Roll tablespoonfuls of the mixture into balls.
  • Heat oil in a wok over medium-high heat. Cook half the meatballs, turning occasionally, for 5 minutes or until browned. Transfer to a plate. Repeat with remaining meatballs.
  • Add the onion to the wok and cook, stirring occasionally, for 4 minutes or until golden. Add the garlic and remaining ginger, and cook for 1 minute or until aromatic. Add the remaining curry paste and cook, stirring, for 1 minute. Add the tomato, coconut milk, bay leaves and cinnamon. Reduce heat to low. Add the meatballs and cook, stirring occasionally, for 25 minutes or until the meatballs are cooked through. Stir in the remaining coriander. Discard cinnamon. Serve with rice.
Notes


Cooking tips: Wet your hands when shaping the mixture so it doesn't stick to your hands.

Occasionally stir the ingredients in the wok so they don't stick to the base and burn.

Brown the meatballs to seal in the flavour then return to the wok with the curry to finish cooking.

Make-ahead tips: To freeze: After cooking, set aside to cool to room temperature. Transfer to a large airtight container or divide between small containers. Place in the fridge to chill. Label, date and freeze for up to 3 months.

To thaw: Thaw overnight in the fridge.

To reheat: Reheat the curry in a large saucepan over medium-low heat for 15-20 minutes or until heated through.

After weeks of anticipation, Lady Gaga premiered her new music video, Born This Way, on VEVO Monday morning. In typical Gaga fashion, the 7:20 clip features Gaga in a variety of outrageous looks but for perhaps the first time, the costumes take a backseat to when she gives birth to good and evil. Faux pas: Kate Garraway is horrified when her dig at Jamie Oliver almost ends in disaster - she was questioning his A-list status... as he approached behind her


There are certainly a couple of no-no's when interviewing celebrities on the red carpet, and a big one is not asking them 'How did you get in?'

Kate Garraway came close to a very awkward moment while chatting to the stars at the Vanity Fair post-Oscars bash last night, when she told Daybreak viewers that she couldn't understand how Jamie Oliver managed to get an invite... and moments later he walked past.

Despite appearing to snub him mere seconds earlier, the entertainment reporter excitedly waved him over for a gushing interview.


Kate, reporting from the red carpet at the glitzy party, told Daybreak hosts Adrian Chiles and Christine Bleakley: 'We're not sure how he got an invite. It's our Jamie Oliver. He's not really A-list is he?'

The 43-year-old did an about face, though, when the TV chef and his wife Jools ambled by on their way into the bash.

Garraway grabbed the couple for an interview, telling them they were live on Daybreak

Don't you know who I am? The TV chef told Kate about meeting Colin Firth, whom he called the 'The nicest, most genuine, lovely man ever'


Jamie, 35, unaware of his celebrity status being called into question, happily obliged, telling Kate how he had just met Best Actor winner Colin Firth the week before.

He said the actor is: 'The nicest, most genuine, lovely man ever.'

Kate also chatted to ex-pat Kate Beckinsale and Tom Hanks, who both gushed about the success of The King's Speech.

Underworld actress Kate told the presenter that she had attended university with the film's director Tom Hooper, and he had asked her to be in a play in their first year.

Awkward: Kate was abashed after her gushing interview when Chiles and Bleakley reminded her that she had snubbed him moments before


'So it was surreal, exciting and brilliant to see him win,' she said.
Of Colin Firth, Kate said: 'He should just win everything because he gives such good speeches.'

Tom Hanks left Garraway speechless with his enthusiastic crowing about the film's success.

'Congratulations Britain! You've done it! The King's Speech has taken America by storm. We're exhausted from The King's Speech,' he said.

'I'm an actress': Helene Bonham Carter also chatted with Garraway, joking that she had faked looking pleased when beaten out by Melissa Leo


Helena Bonham Carter, who missed out on a gong for Best Supporting Actress, showed Kate her would-be acceptance speech, which was printed on a giant handkerchief.
'It will never be seen,' she said.

When Kate complimented her on 'looking genuinely pleased' when beaten by Melissa Leo at the start of the ceremony, Helena joked: 'Well I'm an actress, you've got to look pleased that someone else has won.'

She added: 'I've got to be a good example for my children. It's not the winning that counts, is it?'

The Daybreak presenter was snubbed by Glee star Matthew Morrison, after being elbowed out of the way by an American MTV host live on air and failing to be granted an interview when he told her: 'One interview at a time, give me a minute.'

Chiles and Bleakley were in hysterics when a red-faced Kate told them: 'The teeth are white and the elbows sharper out here, I'm just a girl from Oxfordshire, I cna't handle it!'

Chiles saved her, telling viewers, 'We don't want a punch up, we'll leave it there.'

Fearless: Blue Peter presenter Helen Skelton became the first person to high-wire walk across Battersea Power Station today after completing her challenge for Red Nose Day 2011


It took a lot more than sticky back plastic for her to hold it together.

But then Blue Peter presenter Helen Skelton was teetering on a steel wire slightly narrower than a 10p coin suspended 217ft up between two of Battersea Power Station’s chimneys.

Yesterday the plucky 27-year-old became the first person to do the high-wire walk at the South London landmark, taking a nerve-racking 14 minutes to complete the 160-yard journey.

Daring: Helen took just 11 minutes to complete the feat as she crossed the wire 66 metres in the air

Nearly there: The end is in sight for Helen as she travelled across the wire to the other stack


The weather was windy and she had to take countless deep breaths to stop herself from wobbling.

For the last few steps she could barely see because one of her contact lenses had fallen out.

Miss Skelton, who trained for two months for the stunt in aid of Comic Relief’s Red Nose Day on March 18, completed her walk without a net, although she did wear a harness attached to a safety wire.

The presenter, who last year completed a 2,000-mile solo kayak along the Amazon for Sport Relief, said: ‘This is definitely the scariest thing I’ve done. I was freaking out because the first bit was so wobbly. After the first five steps, I wanted to go back. It’s a relief to get it finished.’

Glynis Barber has revealed that she's to leave EastEnders after more than a year as one of the more glamorous residents of Walford.

OK! magazine reports that the former Dempsey And Makepeace star, who plays Ronnie and Roxy's gold-digging mother Glenda Mitchell in the soap, has confirmed she plans to bow out of the show next month.

The 55-year-old actress will quit the Square after daughter Roxy (Rita Simmons) accuses her of stealing some of her inheritance.

However, Glynis hinted that she may well be leaving Albert Square via a black cab rather than a coffin so she hasn't ruled out returning to the soap in the future.


Writing on her official website, she said: '2010 was a busy and exciting year for me playing Glenda Mitchell in EastEnders. After Glenda manages to alienate practically everyone on Albert Square, she makes her exit in March 2011.

'But will she be back in the future to wreak more havoc? Well "she ain't dead" so anything is possible... watch this space!'

However, in typical soap fashion, Glenda is hoping to achieve maximum damage befiore she leaves the Square by revealing all about her affair with Phil Mitchell, played by Steve McFadden, to try and convince Roxy he planted the inheritance money in her home.

Glynis, who is married to her former Dempsey And Makepeace co-star Michael Brandon, said of the plot: 'Glenda doesn't think that Roxy will take Phil's word over hers, so she's devastated when she does.

Hosting the Oscars may well have been Anne Hathaway's most important role to date.

And with the top honour came some serious couture.

Her next look was especially styled for her hilarious cross-dressing spoof with co-host James Franco.

Emerging in a custom tuxedo by Lanvin she managed to make the androgynous theme still look somewhat feminine.

For her third look, the Hathaway slipped into a Vivienne Westwood corseted gown layered with taffeta and lace smattered with sequins.

The princess-style gown was said to have been specially designed for the actress in London.

Setting off the grey tones, she paired the gown with a stunning diamond and dusty amethyst necklace from the Tiffany Archives.

The biggest risk for Hathaway came in her silver-tasselled Oscar de la Renta gown.

But she turned the disco themed ensemble from bordering on tacky to sophisticated, by once again dripping in Tiffany jewels and also slipping her feet into some Jimmy Choo heels.

Next up was a burgundy silk gown by Atelier Versace.

It was followed by a sapphire Giorgio Armani Privé satin column dress which gave a memorising effect on screen with it's shiny accents.

Accentuating the blue tone, she slipped on a pair of Tanzanite and diamond earrings, a black onyx and diamond bracelet, and a diamond and sapphire ring.

Finishing off her hosting duties, Hathaway finally slipped into a slinky Tom Ford smoky grey lace and crystal adorned gown.

Hathaway is the youngest person to host the show, which was broadcast live in more than 200 countries worldwide.

Oscars date: Scarlett Johansson took her agent Joe Machota to the Academy Awards last night


The pair were also spotted together at the star-studded Vanity Fair after party.

Scarlett Johansson took her agent Joe Machota along as her date to the Oscars.

The 26-year-old star split from husband Ryan Reynolds last year and was spotted with a mystery man on the red carpet of the Kodak Theatre as she made her way to the 83rd Academy Awards.

Her spokesperson has now confirmed that her date was in fact her agent, who also represents actress Jane Fonda.


The representative told Us Magazine the relationship is platonic.

The Iron Man 2 star was most recently linked to Oscar-winning actor Sean Penn, 50, earlier this year.

She has also been seen enjoying the company of Saturday Night Live comedian Jason Sudukis and He's Just Not That Into You co-star Justin Long.

Scarlett and Ryan filed for divorce back in December after just two years of marriage.

The Lost In Translaterion star, who was dressed in a bold Dolce & Gabbana confection, presented a best sound award with Matthew McConnaughey during the ceremony.

Fashion fail: Nicole Kidman showed support for suspended Christian Dior designer John Galliano, in one of his gowns - but the white Oriental-inspired gown looked dated and ageing


Christian Dior needs all the good press it can get following John Galliano's arrest last week - but the fashion house failed to win the plaudits it was hoping for when it dressed Nicole Kidman for the Oscars last night.

The white Oriental-inspired gown seemed to wear the actress rather than the other way around - the colour was far too bridal and the embellishment dated and ageing.

And while the 43-year-old's make-up was fresh and pretty - she appears to have eased up on the Botox a little too - her hair was all wrong. The girlish ponytail was far too casual for such a formal dress and occasion and a chic up-do would have been far better.


Cate Blanchett was another that the fashion police had their claws out for. Though she went for a high-fashion choice in Givenchy Haute Couture, the lavender and yellow colour scheme was unorthodox, and, while the statuesque star somehow pulled off the bib-like top, it would have looked comical on anyone else.

Another surprising fashion fail was Michelle Williams in Chanel. While we hate to critique anything Karl Lagerfeld designs, the Blue Valentine star's 'greige' gown was not a flattering choice.

The capped T-shirt-style sleeves looked too casual and scruffy for such a glamorous event, and the bizarre seams at the bust looked as though the fabric had ripped.

Williams redeemed herself with flawless make-up though, and her gamine blonde crop looked fresh and modern.

Melissa Leo's Marc Bouwer dress also failed to impress - she too went for T-shirt-length sleeves on a dress embellished with what appeared to be silver foil, giving it something of a wrapping paper effect.

It is hard to criticise Helena Bonham Carter as she is so wonderfully eccentric, and her black dress by Alice in Wonderland costume designer Colleen Atwood was a vast improvement on recent red carpet attempts.

But for some unknown reason she hit the red carpet in bizarre round sunglasses - were the camera flashes too bright for her?

She showed support for her fellow British stars by wearing a Union Jack around her calf by way of a garter - something she proudly flashed to the crowd as she walked the red carpet.

While Bonham-Carter clearly doesn't take herself too seriously, there were some who clearly do: namely Sharon Stone, who looked rather terrifying as she smouldered for the cameras.

The actress, 52, wore a black gown with an asymmetric neckline decorated with black and grey ostrich feathers. The knot of fabric above the knee looked awkward and uncomfortable though, and her make-up was far too heavy. A softer look, like that created by Nicole Kidman's artist, would have been much more elegant.

Others who fell short of the mark were Michelle Williams's friend and plus-one, Busy Philipps. The dress, with its mixed textures and bows looked like a sweet wrapper, and made the slim actress look larger than she really is.

Virginia Madsen should have taken a leaf from Reese Witherspoon's book when she opted for monochrome - the ruffled dress was too tissue paper-like, making it look cheap.

And Mark Ruffalo's wife Sunrise Coigney went too far the other way with a far too fashion-forward look by Jean Paul Gaultier. The statement shoulderpiece on her dress was distracting, and the overall look was too aggressive with her severe haircut.

Nicole Kidman's dress was designed by British fashion designer John Galliano, who allegedly assaulted a respected art historian last week in an unprovoked attack in Paris.

The designer, 50, is said to have launched an anti-Semitic tirade against curator Geraldine Bloch, 35. Mr Galliano was arrested and has since been suspended from his job as chief designer at Christian Dior, putting his upcoming autumn/winter ready-to-wear collection for the fashion house in jeopardy.

A Paris police spokesman confirmed all details of the allegations against Mr Galliano, and said he was facing criminal charges.

7 Day Cleansing Diet Plan
{SCA} A 7 day cleansing diet can be a good idea if you’ve overindulged over the holidays or while on vacation and you need to get back on track with a healthier diet and exercise program.
Being super-focused on everything you eat for a week gets you back in the mindset of doing the right thing for your body after a period when you haven’t been doing so well.
When you think of a cleansing diet you might think of the Master Cleanse Diet or some other type off ad diet  that involves eating little or nothing over the course of a 7 day cleanse.
While this sort of liquid diet or all one food diet is a popular idea of what cleansing is about, the truth is you can do a 7 day cleansing diet that involves more food than you might expect. The important thing is that you only eat certain types of food to help clean out your body.
7 Day Cleansing Diet
There are different ways to approach a cleansing diet. Some people like to detox by drinking only freshly squeezed fruit juices and filtered water for the duration of the cleanse, which is more like a fad diet, while others say that a seven day cleansing diet is all about cutting out the processed foods and meat and eating only certain kinds of foods for a week. The latter is a much more reasonable and balanced way of dieting. The important thing is that you only eat certain types of food to help clean out your body and do not starve yourself or this will not give results.
It is very important to have lots of water and if possible fruit juices during the 7 day cleansing diet plan. On the first two days, it is generally advised to fast, that is only have water or at the most some freshly squeezed fruit juice. From the third day you can include foods. Foods that are allowed include organic raw fruit and vegetables, steamed or stir-fry vegetables and brown rice. Preferably, stir-fry vegetables should only be cooked in virgin olive oil or sesame oil. Herbs and spices can be added.
You can eat as many of these food items as you like and as often as you like. Be sure to eat lots of green vegetables, such as spinach, broccoli, celery, kale, chard and beet greens, and also be sure to have some fruit each day. If you still find this menu restrictive, then gluten free cereals and frozen rice waffles that contain no artificial flavors or refined sugars can be added.
Tips for 7 Day Cleansing Diet
The following are a few diet tips that must be followed during the duration of the cleanse.
  • Avoid all meat, fish and dairy products. It is also advised to avoid tofu, other meat alternatives and beans.
  • Do not eat any processed foods or simple carbohydrates.
  • It is advised to stick as much as possible to raw, Organic Fruits and vegetables as the main constituent of your food.
  • Make sure the juice that you have is freshly squeezed and not from a bottle.
  • In cooked foods, brown rice is the best option. It is a healthy fiber filled food that will help you feel fuller.
  • When you come out of the diet, don’t go back immediately to eating as you used to. Start by gradually adding in more cooked foods. After a week or so of transitioning back to a more regular diet, you should be able to start eating more meat and processed foods again.
  • Though some experts believe that a detox diet is not very effective, other researchers do agree that when not taken to extremes of fasting, the 7 day cleansing diet is healthy and beneficial.
